Ingredients

  • 50ml Damson gin
  • 25ml Lemon juice
  • 25ml White sugar syrup
  • 25ml Egg white

Method

The idea of a “sour” is to use a strongly flavoured spirit, then add lemon juice to make it sour, but then balance with sugar if needed.

To make the Damson Gin

Mix 2.5L gin, 2kg damsons and 400g sugar together, macerate for 3 months, remove fruit, leave to age (the longer the better)

  1. Chill glass
  2. Add all ingredients to shaker
  3. Dry shake for 5 seconds
  4. Add ice and shake until shaker ices up
  5. Taste test
  6. Double strain into glass
