Get in the Easter mood with this mini egg rocky road recipe

Ingredients

  • 300g white chocolate, chopped
  • 50g butter
  • 50g golden syrup
  • 150g shortbread
  • 75g marshmallows, quartered
  • 150g mini eggs

Method

To make mini egg rocky road

  1. Line a 20x20cm tin with baking paper.
  2. Place the white chocolate, butter and golden syrup into a glass bowl. Place the bowl over a saucepan of simmering water and allow to melt stirring occasionally. Allow to cool slightly.
  3. Break the shortbread into bite sized chunks. Add the broken shortbread, marshmallows and 100g of mini eggs into the white chocolate mix. Stir to combine.
  4. Spoon the mix into the prepared tin and flatten using the back of a spoon. Scatter over the remaining mini eggs and refrigerate for 2 hours.
  5. To serve, cut into approximately 25 mini squares.

Chefs Tip

To make this into an indulgent adult treat, swap the white chocolate for dark or milk. Add amaretti biscuits instead of shortbread and swap the mini eggs for cherries.

The Booths Chocolate Festival will visit Yorkshire this Easter for the first time. This year, the indulgent five day festival will touch down in Ripon on April 6th, to give sweet-toothed Yorkshire shoppers a taste of Booths’ tantalising Easter goodies.

Easter with Booths is all about championing great Northern craft bakers and chocolatiers and the BoothsChocolate Festival will bring together Booths’ finest producers for free instore tastings and workshops on April 6th between 11am and 4pm.

Artisan chocolatiers Davenports, will be showcasing their handmade Booths chocolate Easter eggs, and family bakers Bells of Lazonby introduce chocoholics to Booths’ chocolate Hot Cross Buns, with flavours including Chocolate & Ginger and White Chocolate & Cranberry flavours.

Booths is launching a brand new range of gluten free cakes and bakes for their shoppers, and local bakeries the Ginger Bakers, of Kendal and Love Brownies of Ilkley will be revealing their brand new ‘free from’ cake range at the festival.

There will be creative Easter recipe workshops, where families can learn to make rocky road, simnel truffles and Easter chicks and bunnies, and York based Choc Affair will be giving out samples of their delicious children’s chocolate lollies.

For the adults, Grown Up Chocolate Company will be serving up samples of their Booths chocolate bars, and Booths in house licensed specialists will be sampling Merlyn Liqueur and Yorkshire brewery specials Saltaire Brewery’s Triple Chocoholic and Northern Monk’s Northern Star.
