This simple smoked salmon recipe takes minutes to prepare but is still a real showstopper, perfect for an easy Christmas starter or for a great buffet dish.

Ingredients

  • 1 side smoked salmon, D cut (sliced horizontally)
  • 1 x 85g bag watercress
  • 1 medium sized cucumber
  • 100g radishes
  • For the dressing
  • 2 tbsp crème fraiche
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1 tbsp balsamic vinegar
  • Salt to taste

Method

  • First make the dressing by combining all ingredients in a small bowl and whisking together.  Set aside while you prepare the rest of the ingredients.
  • Next slice the cucumber in half lengthways and use a tea spoon to scoop out the seeds.  Thinly slice the cucumber so that you get nice crescent-shaped pieces.  Thinly slice the radish.
  • Take a large slate or board and place the side of salmon on top one slice at a time, folding each slice to give the whole dish some height.  Scatter over the watercress, cucumber and radish before drizzling with the dressing and serving to your guests.   Bon appétit!
