  • 4 oven-ready partridges
  • 50g carrots, peeled and sliced
  • 50g whole shallots, peeled
  • 200g smoked bacon, diced
  • 50g cannelloni beans
  • 50g borlotti beans
  • 1ltr chicken or game stock


Sear partridges in a hot pan and season well. Remove and set aside.

Add the shallots, bacon and carrots and saute for a few minutes. Return the partridges to the pan and add the beans and the stock.

Cover and then place the pan in a hot oven at 180C for 30 minutes. Allow to rest and then serve in china bowls.
